Coloranti alimentari din plante

Pentru un aspect placut unele preparate necesita o adaugare de colorant. Neavand o actiune nociva, este de preferat sa folosim coloranti naturali, din plante.

Verde: se extrage clorifila din frunze de spanac sau urzica, bine maruntite. Se toaca planta si se lasa la macerat in apa rece sau alcool, timp de cateva ore, amestecand din cand in cand. La unele bauturi pot fi folosite frunze de menta.

Galben sau portocaliu: se obtine din stigmate de sofran. Sofranul este in acelasi timp si condiment si un sedativ slab. Galbenul se mai poate obtine din flori de galbenele. Pentru salate, placinte, piftie se foloseste sucul de morcov, stors din leguma rasa, adaugat nefiert sau punand leguma rasa.

Rosu: se extrage cu apa sau alcool din sfecla rosie sau din flori de nalba. Varza rosie si ardeiul kapia se folosesc in special la colorarea muraturilor si salatelor.

Roz si mov: Sucurile, siropurile, lichiorurile, diverse creme se pot colora cu zeama de zmeura, cirese amare, mure, coacaze negre.

Cel mai frumos mov mi-a iesit cu afine
Galbenul cel mai sanatos este cu curcuma Si la un aluat pui un varf de cutit si parca ai folosit 10 oua ))
