se toaca marunt ceapa, morcovul si telina. intr-un vas se pune untul la topit cu uleiul si se adauga legumele, se calesc pana s einmoaie, dar sa n u s eprajeasca, apoi se adauga pancetta si carnea tocata. se amesteca bine sa se omogenizeze , se caleste la foc mic foarte bine, mai adaugandu-se...

Se spala, se lasa la scurs pulpele, se cresteaza.Separat se face urmatorul amestec:sucul de la o lamaie,uleiul de masline,cimbrul,boiaua, usturoiul pisat,sare ,piper.Pulpele se lasa in acest sos la rece circa 1 ora dupa care se impaneaza cu usturoi verde ,se aseaza intr-o tava si se rastoarna...
