Oana este prietena draga a tuturor bucatarasilor harnici, care vor in fiecare zi sa stie mai multe, sa devina mai buni.

Este prezenta in mijlocul celei mai vesele comunitati culinare de la inceputurile Bucataras, asa incat rolul de gazda buna, cu un sfat potrivit pentru fiecare, i se potriveste cum nu se mai poate mai bine.

Oana te asteapta in fiecare zi zambitoare, pentru a dezlega impreuna micile mistere inca nedescoperite ale gatitului, aceasta joaca frumoasa de care sunteti pasionati.

Mierea este toxica sau nu la incalzire pe foc? In quiz-ul de pe site exista chiar o mentiune "24. Mierea devine toxica la temperaturi: Mai mari de 40 grade" Insa mierea o folosesc bunicile de atata timp in foile pentru prajituri si sunt foarte bune. Asa ca as dori sa stiu daca este doar un mit...

Raspunsul specialistului

Multumesc in primul rand pentru intrebare, am spart gheata ca sa zic asa :)

Este un mit, asa s-a crezut mult timp, insa nu devine toxica, ci isi schimba proprietatile curative si devine un simplu indulcitor.

Tratata termic, se formeaza o aldehida (alcool dehidrogenat) numita hidroximetilfurfurol, abreviat HMF.

Acest compus este considerat ca fiind daunator sanatatii in urma unor teste efectuate in-vitro si a unor studii pe sobolani. Nu exista niciun studiu cu subiecti umani care sa demonstreze efecte daunatoare asupra oamenilor.

Mierea proaspata naturala contine cantitati foarte mici de HMF (mai putin de 15mg/kg) iar standardul specificat in Codex Alimentarius este de 40mg/kg.

Prelucrarea termica a mierii creste catitatea de HMF, dar nu intr-atat astfel incat aceasta sa devina toxica. Totusi daca mierea este incalzita la temperaturi mai mari de 40 de grade Celsius enzimele din aceasta incep sa se distruga, ceea ce reduce foarte mult proprietatile curative ale mierii.

Comparativ cu mierea, zaharul are o concentratie de HMF de 100 de ori mai mare.
